Red Spinach Salad with Poppyseed Dressing

This easy-to-throw-together spinach salad has the best of everything - satisfying crunch, beautiful color, bright pops of fruit, and a creamy homemade poppyseed dressing to bring it all together.

For the Salad:

  • 5 ounces fresh spinach
  • 1/2 cup halved cherry or grape tomatoes
  • 1/2 cup quartered strawberries
  • 1/2 cup diced red pepper
  • 2 tablespoons diced red onion
  • 2 tablespoons pomegranate seeds
  • 2 tablespoons pepitas
  • 2 tablespoons sunflower seeds

For the Poppyseed Dressing:

  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 3 tablespoons plain Greek yogurt
  • 1 tablespoon maple syrup
  • 1 teaspoon poppyseeds
  • 1/2 teaspoon dijon mustard
  • 1/8 teaspoon salt


  • Combine salad ingredients in a large bowl and set aside.
  • Whisk together dressing ingredients (or shake in a small jar) until emulsified. Serve alongside the salad. Refrigerate any leftover dressing.
