The Method

The method is familiar – plenty of time mixing together room-temp butter and sugar. We’re using brown sugar for notes of caramel along with regular granulated sugar for a sweet bite and to help control the spread of the cookies as they bake.

Add the egg and some vanilla, then mix again until everything is fully combined, light, and fluffy. Finally, barely mix in the dry ingredients before adding loads of chocolate. You don’t want any visible streaks of flour, but you don’t want to overmix here either because that will result in a dense, tough cookie. Nope – no one wants that!

Keep Those Cookies Tender

A light hand is important once that flour hits the butter mixture. As soon as flour makes contact with moisture, like in the butter, eggs, and vanilla, it begins to form gluten. Gluten is important here because it helps hold the cookie together, but the more you mix the flour, the stronger the gluten bonds become. Strong gluten reveals itself in the structure of the cookie, making it more tough and less tender.

Kitchen scales are inexpensive, make clean-up easier, and speed up the process of baking once you get the hang of it. It’s so easy and has so many advantages, we firmly believe every baker should be using a kitchen scale!

If you want to find your own, look for one with at least a 5-pound capacity, a screen that is fully visible even with a large bowl on the scale, a “tare” button so that you can easily clear out one measurement to make room for the next, and an option to switch between ounces and grams for greater versatility.

Classic Chocolate Chip Cookies

Ingredients
  

  • 2-2/3 ounces 1/3 cup unsalted butter, at room temperature
  • 3-3/4 ounces 1/2 cup packed light brown sugar
  • 2-1/3 ounces 1/3 cup granulated sugar
  • 1 large whole egg at room temperature
  • 1 teaspoon pure vanilla extract
  • 6-3/4 ounces 1-1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon coarse kosher salt
  • 7.5 ounces 1-1/4 cup semi-sweet chocolate chips

Instructions
 

  • Prep: Preheat the oven to 375 degrees F. Line 2 sheet pans with parchment paper or silicone baking mats.
  • Mix Wet Ingredients: In a large bowl or in the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugars on medium speed until light in color and very fluffy, 4-6 minutes. Add the egg and vanilla, then continue to mix until smooth.
  • Add Dry Ingredients: In a separate medium bowl, whisk together the flour, salt, and baking soda. Add these dry ingredients to your batter and mix on low speed until the flour mixture is just incorporated. This should take about a minute. Be careful not to overmix! Gently stir in the chocolate chips.
  • Bake: Scoop tablespoon-size balls of dough and place them 2 inches apart on a parchment-lined baking sheet. Bake for 9-10 minutes or until the cookies are lightly browned on the edges. Cool for 5 minutes on the baking sheet, then remove the cookies to a wire rack and allow them to cool completely.

Notes

  • Store the cooled cookies in an airtight container at room temperature for up to a week or freeze for up to 3 months.
  • You can also freeze the cookie dough balls before baking. Freeze separately on a sheet pan. Once frozen, put your cookie dough balls into a tightly sealed freezer bag or other container. Bake as many as you like, from frozen, adding a minute or two to the baking time. The cookie dough will keep in the freezer for approximately 3 months.
