This easy-to-throw-together Red Spinach Salad is a great way to continue enjoying these flavors. It has the best of everything – crunch, bright pops of fruit, and a creamy homemade poppyseed dressing to bring it all together.
Our red spinach salad is aptly named because almost all of the components are red in color. It is fun and pretty. And delicious, of course!

Simply gather the ingredients and throw them together to make this simple salad. There are quite a few elements and all are amazing together, but feel free to improvise. Or omit something you don’t enjoy or don’t have on hand. Make it your own!
Salad dressing is so quick and easy to make at home. And healthier because there are no preservatives, extra sugars, or unpronounceable ingredients added. The shelf life is shorter, but you can customize the amount and make just what you will actually use. To make it, simply whisk together all the ingredients, or shake it in a small jar (like these) with a tight-fitting lid. Deliciously healthy dressing in only 5 minutes!

Red Spinach Salad with Poppyseed Dressing
Ingredients
For the Salad:
- 5 ounces fresh spinach
- 1/2 cup halved cherry or grape tomatoes
- 1/2 cup quartered strawberries
- 1/2 cup diced red pepper
- 2 tablespoons diced red onion
- 2 tablespoons pomegranate seeds
- 2 tablespoons pepitas
- 2 tablespoons sunflower seeds
For the Poppyseed Dressing:
- 4 tablespoons extra virgin olive oil
- 2 tablespoons red wine vinegar
- 3 tablespoons plain Greek yogurt
- 1 tablespoon maple syrup
- 1 teaspoon poppyseeds
- 1/2 teaspoon dijon mustard
- 1/8 teaspoon salt
Instructions
- Combine salad ingredients in a large bowl and set aside.
- Whisk together dressing ingredients (or shake in a small jar) until emulsified. Serve alongside the salad. Refrigerate any leftover dressing.
