Red Spinach Salad with Poppyseed Dressing

Red Spinach Salad

School has begun and that always makes it feel like summer is over, or winding down at the very least. But that doesn’t mean we are ready to say goodbye to fresh produce. This easy-to-throw-together Red Spinach Salad is a great way to continue enjoying these flavors. It has the best of everything – crunch, bright pops of fruit, and a creamy homemade poppyseed dressing to bring it all together.

Our red spinach salad is aptly named because almost all of the components are red in color. It is fun and pretty. And delicious, of course!

Simply gather the ingredients and throw them together to make this simple salad. There are quite a few elements and all are amazing together, but feel free to improvise. Or omit something you don’t enjoy or don’t have on hand. Make it your own!

Salad dressing is so quick and easy to make at home. And healthier because there are no preservatives, extra sugars, or unpronounceable ingredients added. The shelf life is shorter, but you can customize the amount and make just what you will actually use. To make it, simply whisk together all the ingredients, or shake it in a small jar (like these) with a tight-fitting lid. Deliciously healthy dressing in only 5 minutes!

This dressing recipe makes more than you will likely need for the salad. Store the leftovers in the frig so that you have some on hand for your next salad, whether it’s this recipe or just some simple mixed greens.

Serve your red spinach salad with poppyseed dressing alongside some grilled or roasted meat for a complete meal. Grill up some chicken, bake some biscuits, and throw together this salad for a quick and easy meal your family will love any day of the week.

Don’t forget dessert options: strawberry pie, strawberry shortcake made with our strawberry shortcake scones, blueberry pie, triple chocolate chip cookies, dark chocolate pecan cookies, and ginger peach crisp are all excellent options.

Enjoy!
