Peanut Butter Oatmeal Protein Balls

These deliciously healthy Peanut Butter Oatmeal Protein Balls are filled with fiber and protein from creamy peanut butter, chewy oats, your favorite protein powder, and a touch of chocolate.

Ingredients
  

  • 5-1/2 ounces (1/2 cup plus 2 tablespoons) peanut butter
  • 3 ounces (3/4 cup) old fashioned oats
  • 1-1/4 ounces (1/4 cup) vegan vanilla protein powder
  • 3 tablespoons mini semi-sweet chocolate chips
  • 1 tablespoon honey
  • 1/8 teaspoon coarse kosher salt

Instructions
 

  • Combine all ingredients in a medium bowl. Roll into 1-inch balls and refrigerate for at least an hour. Store in a sealed container in the refrigerator for up to 2 months or freeze for up to 6 months.

Notes

  • Can use either crunchy or creamy peanut butter, or can substitute other nut or nut-substitute butters for the peanut butter.
  • Add a little cinnamon for a delicious twist!
