We’re heading back in time with these sweet goodies. Back to memories of after-school treats and of time with our own kiddos and their first attempts at making something in the kitchen. The recipe couldn’t be easier, with the technique you remember. The twist is in the addition of cinnamon cereal and a little cardamom, bringing those warm flavors to this classic favorite. Plus, we’re making a smaller batch, which is sometimes a nice thing to have. Feel free to double the recipe and press it into a 11×13 dish to have even more marshmallow and cinnamon goodness!

A Simple Technique

Start by melting butter and marshmallows into a gooey mess. Add a little vanilla, a little salt, and that bit of cardamom. Then stir in your cereal until it’s fully coated. Press it all into a well-greased pan, then let it firm up. Work fast at this point because the mixture will cool quickly. In fact, the whole process happens quickly, which is a good thing. You will be enjoying your treats before you know it!

Helpful Tips

Baking spray and parchment paper will be your best friends with this sticky recipe. First, spray your spoon or spatula with baking spray before you use it. This will help to keep the marshmallows from sticking too much as you stir. Spray again before using it to press down your mixture.

Also, if you line the pan with parchment along with non-stick spray or butter, the treats will be much easier to cut and remove when you are ready to eat them! Avoid using waxed paper because the cereal mixture will be hot when it hits the pan and some of the wax may melt onto your treats.

Cinnamon Crispy Treats

These Cinnamon Crispy Treats have all the chewy marshmallow goodness we love warmed with cinnamon and a hint of cardamom.

Ingredients
  

  • 2 ounces (4 tablespoons) unsalted butter
  • 10 ounces (5 cups) mini marshmallows
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon cardamom
  • 3-1/2 ounces (3 cups) crispy rice cereal
  • 2 ounces (2 cups) cinnamon rice squares cereal (such as Cinnamon Chex)

Instructions
 

  • Prep: Prepare an 8×8-inch pan by spraying it with nonstick spray or spreading a thin coat of butter inside. Add parchment paper if desired. Measure out your ingredients and have them near you, ready to use.
  • Cook and Mix: Melt the butter in a large pot over medium low heat. Once the butter is melted, add the marshmallows and stir until they are fully melted. Remove from the heat then stir in the vanilla, salt, and cardamom. Add the cereals and stir until the cereal is evenly coated with the marshmallow mixture. Carefully press the mixture into your prepared pan with a spatula that has been sprayed with nonstick spray or coated with butter.
  • Cool and Enjoy: Allow to cool before cutting into squares and serving.

Notes

  • This recipe is naturally gluten free. Double-check to be sure to make sure your cereals and marshmallows do not contain gluten.
  • If you don’t have cinnamon rice squares cereal, substitute regular rice squares and add 1 teaspoon of cinnamon along with the vanilla, salt, and cardamom.
  • If you’d prefer a larger batch, simply double this recipe and press it into an 11×13 dish.
