Start with Candied Pecans

Making your own candied pecans is so simple. First, toast the pecans to bring out that nutty flavor, then saute them with a bit of sugar and some spices until they are coated with a sweet layer with a hint of spice. Allow to cool and the coating will firm up, giving the nuts a delicate, sweet crunch.

Make Your Mix

Once the pecans are cool, throw them together with seeds and dried berries. Then all you need to do is enjoy!

The smaller seeds do tend to settle to the bottom, so mix it up well each time you serve it. You can also chop the pecans into smaller pieces, too. When they are approximately the same size as the seeds, the seeds won’t tend to settle quite as much.

Mix It Up

Use whatever nuts and seeds you like best. We are partial to candied pecans, but other softer nuts work well, too. We also love the dried blueberries with the cranberries and cherries for the perfect blend of slightly tart and sweet. Candied Pecan Snack Mix

Our Healthy Candied Pecan Snack Mix is a delicious, quick, and simple way to satisfy those cravings without added guilt.

Ingredients
  

  • 2 cups raw pecans
  • 3 tablespoons brown sugar
  • 2 tablespoons butter
  • 1 tablespoon water
  • 3/4 teaspoon kosher salt
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon cayenne pepper heaping
  • 1/8 teaspoon cardamom
  • 1/8 teaspoon nutmeg scant
  • 1 cup pepitas salted
  • 1 cup dried berries (cranberries, blueberries, cherries, or a mix)

Instructions
 

  • Toast the Pecans: Preheat the oven to 350 degrees F. Spread the pecans out on a sheet pan in a single layer and bake for 5 minutes.
  • Candy the Pecans: While the pecans are toasting in the oven, combine the brown sugar, butter, water, salt, cinnamon, cayenne, cardamom, and nutmeg in a saute pan. Heat on medium, stirring constantly the butter is melted and the sugar dissolved. Continue to stir and cook for 2 minutes.
    Add the toasted pecans and continue to cook and stir for another 2 minutes before spreading the pecan mixture in an even layer on a silicone mat or parchment paper to cool.
  • Mix it Together: Once the pecans are cooled, combine them with the pepitas and dried berries.

Notes

  • For a sweeter option, add 1/2 cup dark chocolate chips at the end with the berries.
  • Your mix will stay fresh in an airtight container stored at cool room temperature for up to a month.
