We’re already well into January and trying to make good on all those healthy-eating promises we made to ourselves as we rang in the new year. It seemed so do-able two weeks ago, didn’t it? This fresh and flavorful Cabbage Salad with Apples will take you at least one full step in a healthy direction. That’s what we really need – one healthy step at a time.

We combine shredded cabbage with romaine to make this more than a simple slaw, though it can be eaten like a slaw and is oh-so-delicious atop a taco or alongside some slow-roasted barbecue. Top it with some chicken and it’s a wonderful lunch or even dinner. As written, without adding animal protein, this salad is an amazing vegan dish.

The kick of the vinegar and slight heat from a dash of hot sauce is balanced with the olive oil for a wonderful dressing that coats all of those wonderfully crunchy ingredients. The apples bring a light sweet note to the mix. We can’t get enough!

Prep Tips for Cabbage Salad with Apples

A food processor like this one makes shredding your cabbage and romaine so much easier. A chef’s knife is also a great tool, but will take a bit longer. 

Peel your apple if you prefer, but it’s not necessary. Honestly, I often leave it on for the color alone. Also, if it’s acceptable to do less prep work and save a bit of time on busy weeknights, I will usually take it! Your Cabbage Salad with Apples will be delicious either way, so do what you like best or what your time will allow.

Cabbage Salad with Apples

Our Cabbage Salad with Apples combines cabbage with romaine, apples, and a slightly spicy dressing for a deliciously healthy vegan dish.

Ingredients
  

For the Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon molasses
  • 1/4 teaspoon hot sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Salad:

  • 2 cups shredded cabbage
  • 1 cup shredded romaine lettuce
  • 1/2 cup thinly sliced red onion
  • 1/2 cup thinly sliced halved and cored granny smith apple
  • 1/2 cup thinly sliced orange, red, or yellow bell pepper

Instructions
 

  • Whisk together all of the dressing ingredients in a large bowl. Add all of the salad ingredients and toss until evenly coated with the dressing. Serve immediately.
